Peas, likes beans and other legumes produce their own nitrogen with the help of soil Rhizobium bacteria that live in specialized root nodules. They are easy to grow, productive and delicious. Snow Peas and Sugar Snap Peas have sweet, tender pods that can be eaten whole. Younger pods will be more tender but older, more mature pods will accumulate sugars and become sweeter as they grow. Shelling peas have fibrous pods which generally aren't eaten, the peas within are best removed from the pods once they fully fill out and consumed fresh or briefly cooked.
